PARWAL KA ACHAR (POINTED GOURD'S PICKLE)

Ingredients

  • Pointed gourd/parwal - 1 Kg
  • Black mustard - 50 Gms
  • Dry mango powder (amchor powder) - 2 Tbsp
  • Red chilly powder - 1 Tbsp
  • Turmeric powder - 1 Tsp
  • Black salt - 1 Tbsp
  • Salt -1 pinch to taste
  • Mustard oil - 1/2 Cup

Directions

Clean pointed gourd very gently and make a slit in the middle but don't cut it in two pieces

Boil water in steamer/ idly stand / momo maker or in a large pot

While using pot keep strainer on its mouth,Put all Pointed gourd on it and steam for 10 minutes with lid on medium heat

Make powder form mustard seeds

Prepare masala mix in a bowl, Add mustard powder,black salt,dry mango powder,red chilly powder, kashmiri chilly powder, turmeric powder, common salt and 1 tbsp oil together and mix well

Take out pointed gourd pieces from strainer / steamer,Keep it in a tray and let it dry in fan for another 1/2 hour

Take out rest of oil in a bowl,Now fill little - little masala in every piece

Just coat oil on each pointed gourd and keep it in a jar,Sprinkle rest of masala on the top

Pour rest of oil inside the bottle

Keep this jar in sunlight for one day without lid

Now close lid and keep it in fridge

This pickle will last for one month, Enjoy it whenever you want
