BAIGAN KA CHOKHA (ROASTED MASHED EGGPLANT)

Ingredients

  • Baigan (Eggplant) large size 2 nos
  • Tomatoes large size 2 nos
  • Onion large finely chopped 1 nos
  • Green chillies,finely Chopped 2 nos
  • Ginger,finely chopped 1 tsp
  • Garlic cloves 6 nos
  • Mustard oil 1 tbsp
  • Coriander leaves 2 tsp
  • Salt 3/4 tsp

Directions

Rub little oil outside of eggplants and tomatoes

Make 3 holes in each eggplant and insert 3 garlic cloves in it

Make two cuts in tomatoes before roasting on gas flame

Now roast both ingredients on gas stove till cooked properly,Cover it with aluminum foil or leave as it is for 10 minutes so that skin would come out easily

Take off skin from eggplants and tomatoes,Keep it in a bowl and mash garlic cloves and both veggies properly with help of spoon

Now add chopped onion, green chillies, ginger, salt, coriander leaves and mustard oil n mix very well

Usually it's always serve with stuffed sattu paratha and Litti signature deligacy of Bihari cuisine

But one can take it with plain chapati also as main veg item in daily meals, We can take it while weight loosing program
